In addition to the innate characteristics of the Picual variety, its careful harvesting and its subsequent process of cold milling, God and mountain range willing, Terra Andúyar is the custodian of exceptional fruity characteristics: intense, healthy, harmonious and balanced, despite its herculean character, a clear symptom of its greatness.
Its greatness is due to the degree of maturation which the olive has reached when it is harvested. The olive reaches that a perfect ripeness, just when it starts to change colour, like any other fruit. We never let it fall from its branch like an apple which hits the ground, and which you cannot enjoy in the full glory of its flavour.

Another factor that makes it exquisite is the cultivation area, in the mountains, where one comes to regenerate. Sierra Andujar, in the heart of Sierra Morena, is the place where we decided that Terra Andúyar should be born.
